Ingredients
- 1/2 gal. whole milk
- 1 egg
- 3/4 c. sugar
- 1 tsp. vanilla
- 1 tsp. lemon or orange extract
- 4 Tbsp. margarine
- 3/4 c. uncooked rice
- water
Directions

1Place rice in 4-quart saucepan.

2Add water to cover rice. Pour in 1-quart of milk.

3Bring to a boil (15 minutes).

4Place in a mixing bowl, egg, sugar, vanilla, lemon or orange extract and 1 quart of milk.

5Beat well.

6Add this mixture to boiling milk. Also add margarine.

7Bring to a second boil.

8Allow to simmer for 1 hour, stirring frequently.

9Sprinkle with nutmeg or cinnamon to serve.

10Makes about 1 1/2 quarts.

11Fills 2 (6 x 8-inch) aluminum tins.
