- 1 c. cooked rice
- 4 Tbsp. raisins
- 2 eggs, slightly beaten
- 2 c. milk
- 2 packets diet sugar
- 1/2 tsp. vanilla
- 1 Tbsp. lemon juice
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
Directions

1Set out 4 custard cups.

2Place 1/4 cup rice in each dish.

3Add 1 tablespoon raisins, 1/4 egg, 1/2 cup milk and 1/2 packet diet sugar.

4Sprinkle vanilla and lemon juice in each cup.

5Stir and bake in oven 40 to 45 minutes at 350°.
