Rice with Shrimp

  • 2 cups long-grain white rice, uncooked
  • 2 Tbsp. olive oil, divided
  • 2 cups water
  • 1 red onion, chopped
  • 1 clove garlic, minced
  • 1 lb. uncooked medium shrimp, peeled, deveined Safeway 1 lb For $8.99 thru 02/09
  • 4 oz. OSCAR MAYER Boiled Ham, chopped
  • 1 red pepper, cut into thin strips
  • 2 Tbsp. lite soy sauce

    Cook and stir rice in 1 Tbsp.

    oil in medium saucepan on medium heat 1 min.

    Stir in water.

    Bring to boil; cover.

    Simmer on medium-low heat 20 to 25 min.

    or until rice is tender.

    Heat remaining oil in large skillet on medium-high heat.

    Add onions and garlic; cook and stir 2 min.

    Add shrimp, ham and peppers; cook 5 min.

    or until shrimp turn pink, stirring frequently.
