- 2 cups long-grain white rice, uncooked
- 2 Tbsp. olive oil, divided
- 2 cups water
- 1 red onion, chopped
- 1 clove garlic, minced
- 1 lb. uncooked medium shrimp, peeled, deveined Safeway 1 lb For $8.99 thru 02/09
- 4 oz. OSCAR MAYER Boiled Ham, chopped
- 1 red pepper, cut into thin strips
- 2 Tbsp. lite soy sauce
Directions

1Cook and stir rice in 1 Tbsp.

2oil in medium saucepan on medium heat 1 min.

3Stir in water.

4Bring to boil; cover.

5Simmer on medium-low heat 20 to 25 min.

6or until rice is tender.

7Heat remaining oil in large skillet on medium-high heat.

8Add onions and garlic; cook and stir 2 min.

9Add shrimp, ham and peppers; cook 5 min.

10or until shrimp turn pink, stirring frequently.

11Stir in rice and soy sauce.
