  • 100 grams dark (semisweet) chocolate, chopped coarsely
  • 1 cup water
  • 1 cup brown sugar
  • 125 grams butter
  • 3 eggs
  • 2 cup plain flour
  • 3 tspn baking powder
  • 1/4 cup cocoa powder

    Preheat oven to 160C Celsius.

    Combine chocolate and water in a small saucepan.

    Cook, stirring continually, over a medium-low heat until the chocolate is completely melted.

    Remove from heat and allow to cool as you perform the following two steps.

    Cream the butter and sugar in a large bowl.

    Add the eggs one at a time, beating well after each addition.

    Combine flour, baking powder and cocoa powder in a separate bowl and whisk together to combine.

    Alternating between the flour and chocolate mixtures, add these to the creamed butter/sugar.

    Stir gently after each addition until just combined.

    Spoon into lined muffin trays.

    Bake at 160F for about 20 minutes (or until a toothpick comes out clean).
