- 3/4 c. flour
- 3 Tbsp. sugar
- 1 1/2 tsp. grated lemon peel
- 6 Tbsp. butter or margarine
- 1 slightly beaten egg yolk
- 1/4 tsp. vanilla
- 3 c. Ricotta cheese
- 3 egg yolks
- 1/2 c. sugar
- 2 Tbsp. flour
- 1 tsp. orange peel
- 3 egg whites
Directions

1For crust, stir together flour, sugar and lemon peel.

2Cut in butter until crumbly.

3Stir in 1 egg yolk and vanilla.

4Pat 1/3 of the dough onto the bottom of 8 or 9-inch spring-form pan.

5Bake at 400° about 7 minutes, until golden.

6Cool.

7Butter sides of pan. Attach to bottom.

8Pat remaining dough onto sides of pan to height of 1 1/2 inches.
