- 3 egg whites, whipped stiff
- 1 c. sugar
- 1 tsp. baking powder
- 1 tsp. vanilla
- 20 Ritz crackers (2.5 oz.)
- 1/2 c. walnuts
Directions

1Beat egg whites until very stiff.

2Gradually add sugar to stiff egg whites, then add baking powder and vanilla.

3Continue beating mixture at least 3 minutes; set aside.

4Crush crackers and walnuts thoroughly (a food processor with plastic blade works well); combine.

5Fold the cracker mixture into the egg white mixture.

6Spread into an 8-inch pie pan, greased with butter. Bake for 30 minutes at 350°.

7Cool.
