Ingredients

  • 1 medium cushaw or large winter squash
  • 2 eggs
  • 1 c. sugar
  • 2 Tbsp. flour
  • 1 tsp. vanilla
  • 1/3 c. butter
  • 1/2 tsp. baking powder
  • cinnamon to taste

Directions

    Cut, cook and scrape squash.

    Mash squash in a large bowl. Mix in remaining ingredients and pour into a 9 x 13-inch pan. Bake, uncovered, for 45 minutes at 350° (until brown on top). Freezes well.
