- 3 lb. chicken
- 1 bay leaf
- 1/2 tsp. dry thyme
- 1 clove garlic
- 1 onion, cut in chunks
- 2 Tbsp. margarine
- 1 c. chicken broth
- olive oil
Directions

1Wash and dry chicken.

2Place the bay leaf, thyme and garlic in the cavity of the chicken.

3Sprinkle with salt and pepper and then truss.

4Place chicken in roasting pan; scatter onion chunks around it.

5Rub with olive oil.

6Place the chicken on its side and bake for 20 minutes.

7Occasionally, pour off fat.

8Place chicken on its back.
-
9Add margarine and chicken broth and roast 20 minutes longer, continuing to baste.

10It is done when juice is clear.
