  • 1/2 c. cornbread, crumbled
  • 1/4 c. white raisins
  • 1/2 c. chopped pecans
  • 1 tsp. sage
  • 1 tsp. Italian seasoning
  • 1/8 tsp. garlic powder or 1 to 2 fresh cloves garlic, minced
  • plump young possum, dressed but not cut up or 2 (1 lb.) pork tenderloins
  • 1/4 c. chopped celery
  • 1/2 c. minced onion
  • 1/2 Tbsp. chopped fresh parsley
  • salt and pepper to taste
  • 1/2 c. apricot jam
  • 1/4 c. bourbon

    If you can't catch a possum, you can substitute pork instead.
