- 1 large salmon or trout
- 3 ounces softened butter
- 2 teaspoons ground mace
- 1 leek or large onion
- Mixed chopped herbs:- parsley, sorrel, fennel, good king Henry, marjoram, etc.
- 1 glass white wine
- 10 cloves
- Ground black pepper
- Salt
Directions

1Preheat the oven to 350 degrees F (180 degrees C).

2Scrape the scales off the fish.

3Slit and gut it.

4Combine the butter and mace and spread half on the inside cavity.

5Chop the leek or onion finely and mix with the herbs.

6Stuff into the salmon.

7Either sew up the fish or fasten with the skewers.

8Place on a baking tray, and spread with the rest of the butter and mace.

9Pour over a glass of white wine and sprinkle with cloves, pepper, and salt.

10Cover with foil and bake for 30 to 45 minutes depending on the size of the fish.

11Pour the fish juices over to serve.
