Roasted Mexican Chicken

- 1 pound Whole Chicken
- 2 Tablespoons Olive Oil
- 1 package (1 Oz. Packet) Taco Seasoning (I Used Old El Paso)
- 23 cups Water
- 1/4 cups Fresh Cilantro
Directions

1Rinse chicken thoroughly inside and out under cold running water.

2Pat dry with paper towels.

3Put chicken into a baking pan.

4Rub with olive oil and sprinkle taco seasoning over the chicken and rub on all sides (as it says on the packet for the taco seasoning).

5Pour the water in the bottom of the pan.

6Then sprinkle on the chopped fresh cilantro.

7Roast the chicken in the preheated oven at 350F for 1 1/2 2 hours or to a minimum internal temperature of 180 degrees.

8Let cool 10 to 15 minutes and serve.

9Every 30 minutes I would baste the chicken.
