- 2 to 3 lb. potatoes
- 2 to 3 Tbsp. butter or margarine
- salt and pepper
Directions

1Preheat oven to 350° to 400°.

2Wash and scrub potatoes good. Dice potatoes in cubes with skins on.

3Put potatoes in large pot of water.

4Boil potatoes 10 to 12 minutes.

5Drain potatoes.

6Heat butter in a shallow pan that will allow them to be in one layer. When butter is hot, roll potatoes in butter until they are covered completely.

7Add salt and pepper.

8Place them in a 350° to 400° oven.

9Cook for about 1 1/2 hours, turning occasionally so they will brown evenly.

10(You may use a little vegetable oil when butter cooks out of potatoes.)
