  • 1/4 cup chopped onion
  • 2 tablespoons chopped celery
  • 2 tablespoons butter or margarine
  • 1 cup cooked, mashed potatoes
  • 3/4 cup soft breadcrumbs
  • 1 egg, beaten
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon dried whole marjoram
  • 1/4 teaspoon salt
  • Dash of pepper
  • 2 pounds pork spareribs (two rib sections)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup water

Directions

    Saute onion and celery in butter in a skillet until tender. Stir in potatoes, breadcrumbs, egg, parsley, marjoram, 1/4 teaspoon salt, and dash of pepper.

    Place stuffing on one half of sparerib slab. Fold remaining half over stuffing; secure with wooden picks. Sprinkle spareribs with remaining salt and pepper. Bake at 450°, uncovered, for 30 minutes. Reduce heat to 350°; pour water around spareribs . Cover; bake for 1 hour or until tender. Remove wooden picks. Cut into serving size pieces.
