Roasted Winter Vegetables

- 1 Tbsp. butter
- 1 1/2 tsp. tarragon
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 head broccoli (about 3/4 lb.)
- 1/2 head cauliflower
- 2 small red onions
Directions

1Place butter and spices into shallow roasting pan in oven just to melt butter. Cut broccoli and cauliflower into florets.

2Cut onions into wedges. Toss onions in butter, mix and roast, uncovered, 5 minutes. Stir in remaining veggies. Continue roasting until tender.

3Bake at 425° for about 25 minutes.
