- 12 cup water
- 18 teaspoon salt
- 1 dash nutmeg
- 2 tablespoons butter
- 12 cup all-purpose flour
- 2 eggs
- 13 cup shredded swiss cheese
- 1 cup sliced almonds
- dalad oil (for deep frying)
Directions

1Place water, salt, nutmeg and butter or margarine in a 2-quart saucepan.

2Bring mixture to a full rolling boil over high heat.

3Add flour all at once.

4Remove pan from heat.

5Stir until mixture forms a ball and leaves sides of pan.

6Beat in eggs, one at a time, until mixture is smooth and shiny.

7Add cheese and stir until blended.

8Drop mixture by teaspoons into almonds in a shallow pan.

9Roll to coat evenly and shape each into a 3/4-inch ball.

10Place on waxed paper and let stand 10-15 minutes.

11Pour oil to a depth of 1 1/2-2 inches into a deep, heavy frying pan or electric skillet.

12Heat to 370 degrees.

13Fry cheese balls, about 8 at a time, until golden brown on all sides, 2-3 minute Remove with slotted spoon and drain or paper towels.

14Keep balls warm in oven at 200 degrees until all are fried.

15Serve hot.
