- 6 whole chicken breasts, boned and skinned
- salt to taste
- Cheddar Filling
- 1/2 c. flour
- 2 eggs, slightly beaten
- 3/4 c. fine dry bread crumbs
- oil (for deep frying)
Directions

1Rinse chicken and pat dry.

2Pound 1/4-inch thick with meat mallet.

3Sprinkle with salt.

4Spoon Cheddar Filling onto chicken; roll to enclose filling.

5Sprinkle chicken rolls with flour.

6Dip in egg; coat with bread crumbs.

7Chill, covered, for 1 hour.

8Deep fry rolls in 375° oil for 5 minutes or until crisp and golden brown; drain.

9Place in baking dish.

10Bake at 325° for 30 minutes. Yield:
