- 225 g flour
- 75 g butter or 75 g margarine
- 75 g lard or 75 g cooking fat
- 1 pinch salt
- squeeze lemon juice
Directions

1Sieve flour and salt into mixing bowl.

2Cut fat in flour into small pieces.

3Mix to stiff dough with cold water and added lemon juice.

4Turn on to lightly floured board.

5Roll into strip about 0.5 cm thick.

6Keep ends square and sides straight.

7Fold pastry by bringing side edges to middle, then top and bottom edges to middle.

8Fold in half.

9Press edges together.
-
10Whenever possible put into cold place for 10-15 minutes between rolling.

11Half turn roll out and fold again as before.

12Re-roll and use as required.
