Rum-Glazed Grilled Pineapple

- 1 pineapple peeled, cored and sliced into 1/2 inch rings
- 1/2 cup dark rum
- 1/2 cup brown sugar packed
- 1/4 cup orange juice
- 2 tablespoons lime juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cloves
Directions

1Preheat and season a grill over medium flame.

2In a small saucepan over a low flame, combine rum, brown sugar, citrus juices and spices. Heat, stirring constantly, until the sugar dissolves. Remove from heat and allow mixture to cool.

3Place pineapple rings on the grill and baste with rum mixture. Grill for 8-10 minutes, flip the pineapple rings and baste again with rum mixture, cooking for an additional 6-8 minutes.

4Remove pineapple rings from grill and serve with remaining glaze.
