Ingredients

  • 2 bunches Parsley
  • 1 bunch Cilantro
  • 1 bunch Chives
  • 1 bunch Dill
  • 4 stalks Green Onion
  • 6 whole Eggs
  • 2 Tablespoons Flour
  • 1 teaspoon Salt
  • 1/2 teaspoons Pepper
  • 1 teaspoon Garlic Powder
  • 1 Tablespoon Oil

Directions

  1. 1
Wash all the herbs thoroughly and leave them to dry.
  2. 2
I usually do this the night before to save some time.
  3. 3
Chop all the herbs and green onions relatively fine.
  4. 4
Toss them together in a medium bowl along with the flour, salt, pepper, and garlic powder.
  5. 5
Crack the eggs in another bowl and whisk them together.
  6. 6
Heat the oil (I use grapeseed but both canola or olive would work) in a medium non stick skillet on high heat.
  7. 7
Pour the eggs into the herb mixture and toss until combined.
  8. 8
Add the mixture to the hot pan and turn the heat down to medium low.
  9. 9
Cover the pan and cook for 6-7 minutes or until the center is somewhat set when you shake it.
  10. 10
Using a spatula, push the koo-koo onto a plate so that you can flip the uncooked top into the pan.
  11. 11
Cook on the other side, covered, for another 6-7 minutes then slide onto a plate, slice and enjoy!
