- 2 bunches Parsley
- 1 bunch Cilantro
- 1 bunch Chives
- 1 bunch Dill
- 4 stalks Green Onion
- 6 whole Eggs
- 2 Tablespoons Flour
- 1 teaspoon Salt
- 1/2 teaspoons Pepper
- 1 teaspoon Garlic Powder
- 1 Tablespoon Oil
Directions

1Wash all the herbs thoroughly and leave them to dry.

2I usually do this the night before to save some time.

3Chop all the herbs and green onions relatively fine.

4Toss them together in a medium bowl along with the flour, salt, pepper, and garlic powder.

5Crack the eggs in another bowl and whisk them together.

6Heat the oil (I use grapeseed but both canola or olive would work) in a medium non stick skillet on high heat.

7Pour the eggs into the herb mixture and toss until combined.

8Add the mixture to the hot pan and turn the heat down to medium low.

9Cover the pan and cook for 6-7 minutes or until the center is somewhat set when you shake it.

10Using a spatula, push the koo-koo onto a plate so that you can flip the uncooked top into the pan.

11Cook on the other side, covered, for another 6-7 minutes then slide onto a plate, slice and enjoy!
