- 1/2 tsp. saffron
- 6 Tbsp. butter
- 1/2 c. finely chopped onion
- 1 c. raw regular white rice
- 1/3 c. dry white wine
- 1/2 c. Parmesan cheese
Directions

1In saucepan, heat broth with saffron until hot.

2Set aside. Saute onion until tender in 2 tablespoons of butter about 2 minutes.

3Add rice and cook, stirring occasionally, until golden, about 5 minutes.

4Add reserved broth, 1/2 cup of water and wine; bring to boil.

5Reduce heat and simmer, covered, 30 minutes or until liquid is absorbed.

6Before serving, add more butter (2 tablespoons) and cheese.

7Makes 6 servings.
