- 1 (16 oz.) can salmon
- 1 egg, slightly beaten
- 1/2 c. Ritz crackers
- 1/4 c. vegetable oil
- dash of salt
- dash of pepper
Directions

1Drain juice and remove bones from salmon.

2Crumble crackers and add with egg to salmon.

3Heat oil.

4Mix ingredients well and shape into cakes.

5Drop into hot oil and fry until golden brown on each side.

6Serves 4 to 6.
