Salmon Chowder

- 2 c. cooked, flaked and deboned salmon
- 1 c. green onions, minced
- 1 clove garlic, minced
- 1 c. celery, chopped
- 1 Tbsp. flour
- 6 Tbsp. butter
- 1 c. mashed potatoes
- 4 c. half and half
- 1 1/2 Tbsp. Herbes de Provence
Directions

1In a large saucepan, melt butter and saute onions and celery until transparent, but not brown.

2Add 1 tablespoon flour and mix into sauteed onions and celery.

3Now add half and half and bring to a boil.

4Reduce flame to simmer and add flaked salmon and mashed potatoes.

5Stir until mixture is smooth, then add Herbes de Provence.

6Salt and pepper to taste.

7(I added about 1/2 teaspoon of oregano, basil and parsley instead of Herbes de Provence when I couldn't find them.)
