Salmon Chowder

Ingredients

  • 2 c. cooked, flaked and deboned salmon
  • 1 c. green onions, minced
  • 1 clove garlic, minced
  • 1 c. celery, chopped
  • 1 Tbsp. flour
  • 6 Tbsp. butter
  • 1 c. mashed potatoes
  • 4 c. half and half
  • 1 1/2 Tbsp. Herbes de Provence

Directions

    In a large saucepan, melt butter and saute onions and celery until transparent, but not brown.

    Add 1 tablespoon flour and mix into sauteed onions and celery.

    Now add half and half and bring to a boil.

    Reduce flame to simmer and add flaked salmon and mashed potatoes.

    Stir until mixture is smooth, then add Herbes de Provence.

    Salt and pepper to taste.

    (I added about 1/2 teaspoon of oregano, basil and parsley instead of Herbes de Provence when I couldn't find them.)
