- 2 tablespoons oil
- 1 3/4 pounds skinless salmon fillet cut into cubes
- 1 onion peeled and diced
- 1 red chili pepper deseeded and finely chopped
- 1 pound carrots peeled and diced
- 8 spring onions sliced
- 2 teaspoons curry powder
- 1 2/3 cups vegetable stock
- 2 teaspoons cornstarch mixed with 2 tbsp water to a smooth paste
Directions

1Heat the oil in a saucepan and saute the salmon, turning, for 3 mins. Remove from the pan and set aside on paper towels. Add the onion to the pan and saute until softened. Add the chili, carrots, spring onions and curry powder. Add the stock and simmer for 15 mins. Stir in the cornstarch. Add the fish and simmer for 2 mins. Season with salt and black pepper.
