Salmon Loaf

  • 1 large can red salmon, cleaned and drained
  • 1 c. cracker crumbs
  • 1 c. mayonnaise
  • 1 c. sour cream
  • dash of lemon
  • pepper to taste
  • 2 Tbsp. chopped onion
  • 2 Tbsp. chopped cucumber

Directions

    Mix mayonnaise and sour cream together.

    Divide in half; set aside.

    Mix together salmon, onion, cracker crumbs, lemon, pepper and half the mayonnaise-sour cream mixture.

    Place in a greased loaf pan.

    Bake at 325° for 3/4 of an hour.

    Mix the cucumber into the other half of the mayonnaise-sour cream mixture and use for a sauce on the loaf.
