Ingredients

  • 2 c. dry bread crumbs
  • 1 small onion, chopped
  • 2 Tbsp. butter
  • 1/4 c. finely chopped celery
  • 1 c. milk
  • 1 Tbsp. minced parsley
  • 2 eggs, well beaten
  • 1 lb. can salmon, drained and flaked
  • 1/2 tsp. salt
  • dash of pepper
  • 1 Tbsp. lemon juice

Directions

    Saute onion in butter until yellow.

    Combine with celery, salt, pepper, parsley, lemon juice and flaked salmon.

    Combine eggs with milk and pour over bread crumbs.

    Add to other ingredients and blend well.

    Pack into well-greased loaf pan and bake in a 350° oven for about 30 to 35 minutes, or until done.
