- 2 c. dry bread crumbs
- 1 small onion, chopped
- 2 Tbsp. butter
- 1/4 c. finely chopped celery
- 1 c. milk
- 1 Tbsp. minced parsley
- 2 eggs, well beaten
- 1 lb. can salmon, drained and flaked
- 1/2 tsp. salt
- dash of pepper
- 1 Tbsp. lemon juice
Directions

1Saute onion in butter until yellow.

2Combine with celery, salt, pepper, parsley, lemon juice and flaked salmon.

3Combine eggs with milk and pour over bread crumbs.

4Add to other ingredients and blend well.

5Pack into well-greased loaf pan and bake in a 350° oven for about 30 to 35 minutes, or until done.
