Ingredients
- 2 (1 lb.) cans salmon
- 1 large onion
- 4 stalks celery
- 1/4 c. butter
- 1/2 lb. mushrooms, sliced
- 2 c. soft bread crumbs
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 Tbsp. parsley
- 3 tsp. lemon rind, grated
- 1/3 c. lemon juice
- 2 eggs
- 1/2 c. milk
Directions

1Flake the salmon, reserving liquid.

2Chop onion and celery; saute in butter about 10 minutes.

3Add mushrooms and saute another 5 minutes.

4Combine cooked vegetables with bread crumbs.

5Add salmon, liquid, salt, pepper, parsley, lemon rind and lemon juice. Beat eggs lightly and add to salmon mixture with the milk.

6Put salmon mixture in a large, greased loaf pan and bake at 375° for 50 minutes.
