Salmon Loaf(Microwave)

- 12 oz. skinned and boned drained can salmon
- 1/2 c. milk
- 2 slices bread, made into fine crumbs
- 2 eggs, slightly beaten
- 1/4 c. each: celery and scallion
- 2 tsp. fresh dill
- 1/2 tsp. grated lemon peel
- 1/4 tsp. thyme
- 1/8 tsp. each: salt and pepper
- 1 Tbsp. butter, melted and divided
- garnish: lemon slices and dill sprigs
Directions

1In medium bowl combine all ingredients, except butter. Garnish.

2Add 2 teaspoons butter and mix well.

3Grease 8 x 4 x 2-inch loaf pan with remaining butter.

4Spoon in salmon mixture and smooth top.

5Microwave on High for 15 minutes.

6(Center should be firm.)

7Let stand 5 minutes.

8Invert onto platter and garnish. Serves 4.
