Salmon Loaf(Microwave)

Ingredients

  • 12 oz. skinned and boned drained can salmon
  • 1/2 c. milk
  • 2 slices bread, made into fine crumbs
  • 2 eggs, slightly beaten
  • 1/4 c. each: celery and scallion
  • 2 tsp. fresh dill
  • 1/2 tsp. grated lemon peel
  • 1/4 tsp. thyme
  • 1/8 tsp. each: salt and pepper
  • 1 Tbsp. butter, melted and divided
  • garnish: lemon slices and dill sprigs

Directions

    In medium bowl combine all ingredients, except butter. Garnish.

    Add 2 teaspoons butter and mix well.

    Grease 8 x 4 x 2-inch loaf pan with remaining butter.

    Spoon in salmon mixture and smooth top.

    Microwave on High for 15 minutes.

    (Center should be firm.)

    Let stand 5 minutes.

    Invert onto platter and garnish. Serves 4.
