- 1 (15 1/2 oz.) can salmon
- 1 (3 oz.) cream cheese at room temperature
- 1 Tbsp. lemon juice
- 1 tsp. horseradish
- 1 tsp. grated onion
- 1/4 tsp. salt
- 1/8 tsp. pepper
Directions

1Drain, debone and flake salmon.

2Mix together with all other ingredients except garnishes.

3On a pretty platter, mold mixture into a fish shape.

4Arrange almonds to resemble scales down the back of fish design.

5Use slice of olive for eye.

6Chill until serving time. Serve with buttery crackers.

7Refrigerate covered. This is low in salt, sugar and fat.

8Very good for diabetics.
