Salmon Supper Loaf

Ingredients
- 2 (1 lb.) cans salmon
- 1 onion
- 4 stalks celery
- 1/4 c. butter
- 1/2 lb. sliced mushrooms
- 2 c. fresh breadcrumbs
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 Tbsp. chopped parsley
- 4 tsp. grated lemon rind
- 1/2 c. lemon juice
- 2 eggs
- 1/2 c. milk
Directions

1Flake salmon; reserve liquid.

2Peel and chop onion and celery. Heat butter in skillet and saute onion and celery, about 10 minutes.

3Combine with breadcrumbs in a large bowl.

4Add salmon, reserved liquid, salt, pepper, parsley, lemon rind and lemon juice.

5Beat eggs lightly and add to the mixture with the milk. Put mixture in large greased loaf pan and bake at 375° for 50 minutes.

6Serves 6 to 8.
