- 12 prepared taco shells
- 1 ripe avocado
- 3/4 c. grated Cheddar cheese
- 3 c. shredded lettuce
- 1 (1 lb.) can red or pink salmon, drained and flaked
- 1 large tomato, sliced
- taco sauce for serving
Directions

1Preheat oven to 180°C.

2Place taco shells on tray and crisp in oven for 6 to 7 minutes.

3Peel, stone and slice the avocado.

4Brush sides with cold water to prevent discoloration.

5Fill taco shells with layers of avocado, lettuce, salmon, tomato and cheese.

6Top with hot sauce before serving.

7Makes 12 tacos.
