- 1 (14 oz.) can salmon
- 1 slightly beaten egg
- 1/2 c. flour
- 1 heaping tsp. baking powder
Directions

1Drain the salmon; reserve 1/4 cup liquid.

2Put salmon into mixing bowl, breaking it apart with a fork.

3Add flour and egg. Add pepper (no salt); mix well.

4Add baking powder to reserved liquid; beat well with a fork until foamy.

5Pour this into salmon mixture; stir until blended.

6Using 2 teaspoons, scoop out the mixture with one and use the other to push the mixture off the teaspoon into a deep fryer that is half full of hot oil.

7Watch closely; they brown fast.

8Remove from hot oil; drain on paper towels.
