  • 3.5 oz day-old ciabatta, coarsely chopped, crust removed, soaked in 2 cups water for 10 mins, excess water squeezed out
  • 4-5 sprigs fresh mint, leaves picked
  • 1 bunch fresh flat-leaf parsley, leaves picked
  • 1 tbsp capers
  • 1 clove garlic, chopped
  • 2 None anchovy fillets, chopped
  • 1 tbsp lemon juice
  • 1/4 cup extra virgin olive oil
