  • butter for spreading
  • 8 slices white bread
  • 1 can tuna in oil drained, flaked
  • 2 tablespoons cream cheese
  • 1/2 stalk celery finely chopped
  • 2 spring onions finely sliced
  • 1/2 small carrot peeled and grated
  • 1/2 avocado small ripe, peeled, pitted, roughly mashed
  • 7 ounces sweet corn
  • 2 tablespoons cottage cheese
  • 2 ounces pastrami chopped

Directions

    Spread butter over bread. Combine tuna, cream cheese, celery and 1 spring onion. Season. Top 2 slices of bread with carrot, tuna mixture then 2 more slices of bread. Trim crusts then cut each into 3.

    Combine avocado, sweet corn, cottage cheese and remaining spring onion. Season. Top 2 slices bread with pastrami, avocado mixture and remaining bread. Cut into triangles.
