- 2 Tbsp. flour
- 1 c. milk
- 1/4 tsp. salt
- few grains pepper
- 1/2 tsp. scraped onion

1Basic Cream Sauce:

2This white sauce may be made with half chicken stock and half cream or with milk.

3It is a fine dressing for egg dishes, vegetables, fish, grains or pastas.

4Melt butter in small saucepan over moderate heat.

5Add flour; blend well, then slowly stir in the milk.

6Cook, stirring, until the mixture thickens and is smooth.

7Add salt, pepper and scraped onion or onion juice.

8Some cooks like to add a little chopped parsley or chives.

9A half teaspoon of Worcestershire sauce or a little nutmeg is also good.
