- 1 lb. sausage
- 1 large onion, chopped
- 2 eggs, lightly beaten
- 1 1/2 c. cornmeal
- 1 can corn (cream-style)
- 3/4 c. milk
- 1/4 c. oil
- 2 c. (8 oz.) grated cheese (plain or Velveeta Mexican)
Directions

1Preheat oven to 425°.

2Brown sausage with onion and drain. Combine meal, eggs, corn, milk and oil.

3Pour half of mixture into iron skillet.

4Sprinkle sausage mix and cheese.

5Pour rest of batter on top.

6Bake 30 or 40 minutes.
