Sausage egg wraps

  • 1/2 lb smoked sausage
  • 1 tbsp water
  • 2 tbsp vegetable oil
  • 4 large eggs
  • 1/4 cup water
  • 1 tbsp water
  • 2 tsp yellow prepared mustard

    Beat your eggs add quarter cup of water.

    Set aside.

    Take a big pan preferreably a nonstick pan with a lid.

    or take and do the eggs in two batches

    Add oil to a pan , and heat.

    Split the sausage, but don't cut all the way through.

    Add to pan cut side down.

    And cover.

    Cook till done.

    Then add a tablespoon of water and cover to steam the sausages.

    I like mine just a bit crunchy/ caramelized.

    Set on a plate.

    Take the eggs and pour in the pan coating the whole bottom.

    Roll the pan above heat to get the eggs to even out.

    Then add 1 tablespoonfuls of water cover with lid let steam keep the lid on.

    Roll the pan till you can see if the eggs ar still runny or they have cooked.

    I have a glass lid.

    When done cut the egg into four pieces.

    Now you can add mustard to the split in the sausage or just dip them.

    If you add to split do it now.

    Take the split side of sausage put in the middle of the fourth of eggs.

    Wrap the egg around the sausage.
