Sausage Squash Special

Ingredients

  • 1 lb. bulk pork sausage
  • 1 onion, diced
  • 4 c. sliced summer squash or 2 pkg. frozen
  • 1/2 c. fine dry bread crumbs
  • 1/2 c. parmesan cheese
  • 1/2 c. milk
  • 1 tsp. parsley
  • 1 Tbsp. dried oregano
  • 1/2 tsp. salt
  • 2 eggs, beaten

Directions

    Cook sausage and onion until brown.

    Drain.

    Cook squash in small amount or water until tender.

    Drain.

    Mix sausage and squash with next 6 ingredients.

    Fold eggs in carefully and place in 10 x 6 x 1 1/2 oblong dish.

    Bake at 350° for 25 to 30 minutes.
