Sauteed White Beans

Ingredients
- 2 tablespoons extra-virgin olive oil
- 1/2 white or yellow onion, finely chopped
- Kosher salt
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- 1/2 cup white wine
- 1 1/2 cups cooked navy beans
- 2 tablespoons chopped fresh oregano leaves (or 2 teaspoons dried)
- Freshly ground black pepper
Directions

1In a small pan, over medium heat, add the oil.

2When the oil is hot add the onion with a pinch of salt and saute until soft, about 5 minutes.

3Add the garlic and cumin and cook until fragrant, about 2 minutes.

4Raise the heat and add the white wine.

5Cook until the wine has reduced by half.

6Stir in the beans and oregano and season with salt and pepper, to taste.

7Cook gently for 15 minutes.

8Transfer to a serving bowl and serve.
