- 1 tsp flax seed oil
- 1 None small onion, chopped
- 1 None red bell pepper, diced
- 1 1/2 cups brown rice, like Uncle Ben's
- 3 cups chicken broth
- 2 tbsp grated fresh ginger
- 1 None lime, zested, juiced
- 2 tbsp chopped fresh parsley and/or cilantro, for garnish
Directions

1In a saucepan, heat oil over medium heat. Cook onion for 2 mins, or until tender. Add bell pepper, rice, chicken broth, ginger, 1 tbsp lime juice and 1 tsp lime zest. Bring to a boil then reduce heat to a simmer and cook for 35-45 mins, or until rice is cooked through. Season. Just before serving, stir in herbs.
