  • 8 chicken thighs, skinned
  • 1/2 tsp. pepper
  • 1 medium onion, thinly sliced
  • 4 small summer squash, sliced
  • 4 tomatoes, sliced
  • 1/2 tsp. savory, marjoram or thyme
  • 1/4 tsp. paprika
  • 1 1/4 c. tomato or vegetable juice
  • 2 Tbsp. Parmesan cheese

Directions

    Sprinkle chicken with 1/4 teaspoon pepper.

    Break onion slices into rings.

    Put half of the onion in a casserole dish.

    Layer chicken on top, then rest of onion, squash, tomatoes, herbs, paprika and 1/4 teaspoon pepper.

    Pour juice over all.

    Sprinkle with cheese.

    Cover tightly.

    Bake at 350° for one hour.
