- 8 chicken thighs, skinned
- 1/2 tsp. pepper
- 1 medium onion, thinly sliced
- 4 small summer squash, sliced
- 4 tomatoes, sliced
- 1/2 tsp. savory, marjoram or thyme
- 1/4 tsp. paprika
- 1 1/4 c. tomato or vegetable juice
- 2 Tbsp. Parmesan cheese
Directions

1Sprinkle chicken with 1/4 teaspoon pepper.

2Break onion slices into rings.

3Put half of the onion in a casserole dish.

4Layer chicken on top, then rest of onion, squash, tomatoes, herbs, paprika and 1/4 teaspoon pepper.

5Pour juice over all.

6Sprinkle with cheese.

7Cover tightly.

8Bake at 350° for one hour.
