Ingredients

  • 2 medium zucchini, cut in 1/4-inch slices
  • 1 small eggplant, cut into 1/2-inch cubes
  • 1 large green pepper, cut in strips
  • 1 medium onion, thinly sliced
  • 1 pt. cherry tomatoes
  • 3 oz. jar pimento stuffed olives, drained and cut in half
  • 1/2 tsp. basil
  • dash of Italian seasoning
  • 1/4 tsp. pepper

    In large skillet, electric or not, cook veggies until tender, about 10 minutes, stirring occasionally.
