- 2 pears, ripe (Red Anjou or Comice)
- 4 tablespoons unsalted butter (plus extra for ramekins)
- 2 large eggs
- 14 cup heavy cream
- 12 teaspoon kosher salt or 12 teaspoon sea salt
- 18 teaspoon fresh ground black pepper
Directions

1Peel, core, quarter and slice the pears very thin.

2Melt the 4 tablespoons of butter in a skillet over medium-high heat and saute the slices until they soften, without letting them brown, about 7 minutes.

3Remove from the heat and allow to cool.

4Heat the oven to 400F

5Butter 4 (4-inch-wide) ramekins or tart pans.

6Mix the eggs and cream in a bowl and season with the salt and pepper.

7Stir in the pears.

8Divide the mixture among the ramekins.

9Bake 15 minutes.

10Let the clafouti sit 5 minutes, then turn out onto serving plates.

11Garnish with cracked black pepper.
