Scallop Bisque

Ingredients
- 1 lb. calico scallops
- 1 Tbsp. finely chopped onion
- 3 Tbsp. butter or oleo
- 2 Tbsp. flour
- 2 c. milk
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/2 tsp. Worcestershire sauce
- spice bag with 6 peppercorns, 1 whole garlic clove and 1 bay leaf
Directions

1Rinse scallops to remove any grit and if large, cut into 1/2-inch pieces.

2Cook onion in butter until tender.

3Blend in flour and gradually add milk.

4Cook and stir over low heat until slightly thickened.

5Add salt, pepper, spice bag, scallops and Worcestershire sauce.

6Cook gently for 10 minutes.

7Remove spice bag and serve.

8Makes 4 servings.
