  • 2 eggs
  • 2/3 c. milk
  • 1/2 c. crushed saltines (approximately 12)
  • 1/4 tsp. salt
  • 1 (17 oz.) can creamed corn
  • 2 Tbsp. cold margarine, cut in small pieces
  • cherry tomato and parsley (optional)

Directions

    Beat eggs until frothy.

    Stir in remaining ingredients, except garnish.

    Turn into greased 1-quart casserole dish.

    Bake in preheated 350° oven for 1 hour or until knife inserted into center comes out clean.

    Garnish with tomato and parsley.
