- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. chopped onions
- 2 c. milk
- 4 c. sliced potatoes
Directions

1Have potatoes ready.

2Melt butter; blend in flour, salt and pepper.

3Heat until bubbly.

4Add onions and milk and cook until thickened.

5Stir constantly.

6Fry 2 pieces of bacon to get the fat and use 3 pieces of sliced cheese.

7Place 1/2 of the potatoes in a buttered 1 1/2-quart casserole dish.

8Sprinkle a little extra salt over the potatoes, then put 1/2 of the sauce over the potatoes and some of the bacon fat and 1 piece of cheese.

9Tear cheese into small pieces over top, then put the rest of the potatoes, sauce and bacon fat and 2 pieces of cheese on top.

10Cover the dish.

11Bake at 350° for 30 minutes.

12Uncover and bake 30 more minutes or until brown.
