  • 1 pkg. frozen chopped spinach, cooked and drained
  • 1 Tbsp. chopped onion
  • 2 beaten eggs
  • 1/2 c. milk
  • 1/4 c. mild cheese, shredded
  • sliced mushrooms (optional)
  • salt and pepper
  • 1/4 c. bread crumbs, buttered

Directions

    Cook spinach with onion until completely thawed; drain thoroughly.

    Add milk and cheese to saucepan; heat just until the cheese is melted.

    Mix in beaten eggs.

    Stir in spinach to milk mixture.

    Pour into greased 1 1/2-quart casserole dish.

    Sprinkle bread crumbs on top; dot with butter.

    Bake at 350° for 20 minutes.
