Scalloped Squash

  • 3 c. fresh or frozen squash, cooked and drained
  • 2 eggs
  • 1 Tbsp. margarine
  • 2 c. crushed Ritz crackers
  • 1 medium onion, finely chopped
  • 2 c. mild grated cheese
  • 1 Tbsp. milk
  • 1 can cream of chicken soup

Directions

    Cook squash; drain.

    Mix all other ingredients together with squash.

    Grease a baking dish with nonstick vegetable spray.

    Bake casserole at 350° for about 30 to 40 minutes, or until browned on top.
