- 2 cups dried apples
- 3 lbs smoked ham, butt
- 4 cups chicken broth
- 2 cups water
- 2 tablespoons dark brown sugar
- 1 12 cups flour
- 2 teaspoons baking powder
- 14 teaspoon salt
- 2 tablespoons butter
- 1 cup milk
Directions

1Cover apples with boiling water and let stand until cool.

2Drain.

3Trim excess fat from ham.

4Place in Dutch oven and add chicken broth and water.

5Bring to boil.

6Reduce heat and simmer 90 minutes or until tender.

7Remove ham and skim fat from broth.

8Slice and cube ham and return it to the Dutch oven.

9Add apples and brown sugar.

10Bring to boil, stirring to dissolve sugar.

11Reduce heat and simmer 15-20 minutes.

12Make dumplings by combining flour with baking powder and salt.

13Cut into butter to resemble coarse corn meal.

14Add milk and beat vigorously until smooth.

15Drop 6 or 8 spoonfuls into simmering broth.

16Cover tightly and simmer 10 minutes.

17To serve, remove dumplings with slotted spoon.

18Pour ham and apple mixture around dumplings.
