Ingredients
- 6 hard-cooked eggs, chilled
- 1 lb. bulk sausage meat
- 2 Tbsp. finely chopped parsley
- 1/2 tsp. ground sage
- 1/4 tsp. black pepper
- 1/4 c. flour
- 2 eggs, beaten
- 1/2 to 3/4 c. packaged bread crumbs
- cooking oil for frying
Directions

1Peel hard-cooked eggs.

2Combine sausage, parsley, sage, salt and pepper in a large mixing bowl.

3Mix well.

4Divide sausage mixture.

5Press meat mixture around egg with hand, keeping the oval sausage shape.

6Sprinkle eggs with flour, coating lightly on all sides.

7Dip into beaten egg and roll in crumbs.

8Heat oil in deep fryer or deep heavy pan to 350° on deep fat thermometer. Cook one egg at a time for about 4 to 5 minutes until brown. Drain, cool and refrigerate.

9Serve hot or slice in half and serve cold.
