  • 2 egg whites (room temperature)
  • 2 c. brown sugar
  • 1/2 c. granulated sugar
  • 1/3 c. white corn syrup
  • 1/2 c. water
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • 1/2 c. broken walnuts (optional)

Directions

    Put egg whites into a 3-quart mixing bowl.

    Put the next 5 ingredients into a saucepan. Stir thoroughly over medium heat. Cook to hard ball stage.

    Do not stir. Remove from heat to cool while beating egg whites until stiff.

    Slowly add the syrup, beating thoroughly.

    Beating must continue until candy is past the pulling stage and starts to get creamy and holds shape. Add vanilla and nuts (optional) until candy holds swirls.

    Quickly drop candy from spoon into mounds on waxed paper.
